Wuold it be worth getting maybe an i7 that is a generation or 2 older than the lastest ones? Is there really a large performance difference?

Speaking like a 3770k or 4790k will still hold up perfectly fine, of course, but it doesn't make sense to buy older components for a new rig, so it really depends on the situation.

I was just trying to find a way to cut some of the cost down for when I get a new rig.

It depends on your budget and the price you pay for the older item.
