I have 2 aoc i2757fh monitors and one HP monitor, all are 1080p monitors. With the nvidia control panel I made it so I can downscale them to 2560x1440 on my GTX 970, will this harm my monitors? One of my coworkers said he does it with no issues, but I'm seeing some bad as well while researching this.

I would say that it would not cause any harm. Although it would likely look worse because partial pixels are being represented by single pixels on the monitors.

It upscales to 1440p, not downscales. Yes, it is absolutely safe. Keep in mind, that it will look nothing like 1440p native, but it will still look better than 1080p.
