Hello TTG I could use some help building my pc. As of right now I have a EVGA GTX 1070 Superclocked edition. I'm probably going to use this for gaming and editing (every now and then). But 90% of the time gaming (I may record so if that makes a difference then yeah)

I'm presuming you won't overclock.

It's a bit over budget due to the monitors, but a 1070 will show no performance increase on a 1080p monitor. The keyboard is a cheap one. Get a mechanical one when you can. I'd suggest the Corsair K70. If you can't spend this much get one monitor for now.

Smidge over budget. 8GB RAM is plenty. SLI support so you can add a 2nd GTX 1070 at any point if you wish. Better SSD, significantly better PSU, better cooler. You can get the case in black or white instead if you want. Grab the monitor while it's cheap. Alternatively you could get a 1440P 144Hz or 4k monitor. Alternative PSU choice;

What I suggested is better;

The SanDisk Ultra SSD isn't terrible but the MX300 would be wiser. That Corsair PSU is absolute trash. Hyper 212 EVO is a terrible, over hyped cooler. It was good when it was new, 5 years ago but there are better, newer, quieter, and cheaper coolers now. The S340 isn't a great case, I dislike it due to the fact it has limited fan/radiator support, whereas similarly priced cases are fine for fan/rad support and are slightly better quality, like the Eclipse P400(s) and Enthoo Pro M from Phanteks. The S340 would be a perfectly fine alternative case though. Also the motherboard I suggested is objectively better for the same price. The ultrawide monitor I suggested has unfortunately shot back up in price so you've missed that deal, I'd just get a 1440p 144Hz or 4k monitor for your main panel, and a 1080p on the side. Makes more sense than getting 2 x 60Hz 1440p panels IMO.

My build still has an extra 8gb of RAM. Lots of games are having 8gb as a minimum so 16gb means you won't have to upgrade so soon. It also has two identical monitors which adds to the general aesthetics of the setup.

No, it doesn't. The RAM is not priced and once you add 16GB to the system you suggested, you could get the system I suggested for the same price with 16GB RAM. 8GB RAM is absolutely fine. 16GB is handy, but it's not necessary and RAM is the cheapest/easiest component to add a later date. Buying 8GB RAM won't mean you'll have to upgrade soon at all. The 4k LG monitor and 1080p LG monitor above will look perfectly fine together.
Also, as I said, the PSU you suggested is objectively trash, it doesn't belong in any system, the motherboard is over priced, and the cooler is a bad choice for sure.
