Manually eject a disc from your Xbox One S or original Xbox One console
If you can't eject your disc from your Xbox One S or Xbox One console, try these solutions in order. If the first solution doesn't solve the problem, go to the next one.
Note: This process is the same for both the original Xbox One and the Xbox One S consoles.
Solutions
Solution 1: Restart your console, and then try to eject the disc
Press the Xbox button to open the guide.
Note Pressing the Xbox button will open the guide from any other screen on the console.
Select Settings.
Select Restart console.
Select Yes to confirm.
After the console restarts, press the eject button to remove the disc.
Note If you're unable to access the guide, or if the console appears to be frozen, press and hold the Xbox button on the console for 10 seconds, until the console turns off. After the console shuts down, touch the Xbox button on the console again to restart. After the console restarts, press the eject button to remove the disc.
Solution 2: Manually eject the disc using a paper clip
1.Disconnect the power cord and any other cables connected to the console.

2.Uncoil a large paper clip.
Note: A standard-size paper clip is not long enough to eject the disc. You must use a large paper clip because it must be inserted about 1.5 inches (nearly 4 centimeters) to successfully eject the disc.

3. Find the small orange circle behind the vents on the left side of the console. The following shows the location on the original Xbox One console:

4.Insert the straight end of the paper clip into the eject hole, located next to the orange rectangle. You may have to angle it slightly forward (toward the front of the console) as you insert it.
Note The eject hole on the Xbox One S may be harder to see. It might help to perform this step directly under a bright light. To help you navigate, it's the second hole from the right side and the third hole from the bottom.

5.The disc should pop out slightly. Pull out the disc the rest of the way with your fingers using a lint-free cloth to prevent fingerprints and dirt on the disc.
Note: Make sure the disc isn't sticky and doesn't have a label that might prevent it from ejecting again in the future.

Seen your post on this about the 360 and I'm surprised I'm only seeing this now.
The amount of times I forced my disc tray open with a knife or something else is ridiculous but the console is 9 years old still running without any issues.
Thanks for this though cause now I know what to do if my disc gets stuck in any off my 5 consoles haha
