What's the difference between an Apple Watch Series 3 with GPS and Apple Watch Series 3 with GPS + Cellular, like what does the cellular part even do? Is it even worth the extra money??

Basically the cellular allows you to take calls, send texts and use data without having your phone in a nearby radius. I think it's a waste of money because you need to pay extra for a sim for the watch, and you always have your phone on your person anyway.
