Space:
Do NOT get to tight to a quick player. It will give them to opportunity to pull a fast one on you and do a quick turn to pull away from you and then you will be stuck out of position. Worst thing the team needs is a defender out of position. A good tip is to stay an arms length apart from the opponent so you can pounce when you need to.
Do NOT Chase Him:
If you get beat by your opponent, do not go straight after him as it could leave your team open in an area of the pitch. It could also lead to you drawing a foul on him leading to bigger issues. If you get beat run towards your goal and backup would arrive for you, do not get caught way out of position!
Dominance:
Show your strength. Let the attacker know that you are there. If he knows you are there he will have to think about every next move he makes precisely. Use your strength to beat him without drawing fouls left and right, fast players tend to like to dive ;). It also helps you in the mental battle.
Force The Attacker Out Wide:
Forcing him to go towards the outside will help your team get organized in the center and be ready for anything. Attackers have less threat on the side of the pitch rather than in front of goal. Forcing them outside gives them less opportunity.
Play it Safe:
Who cares if it's boring? The attacker is fast and he will pounce at every oppurtunity if you are slow. Play passes around the back to tire him out, just make sure he does not snatch the ball or you are in trouble.
