I'm trying to start MW2 in the xex menu but every time I try to open mp or the default the screen just goes black and when I press the home button the Xbox guide just jitters and I have to turn my console off any solutions?

try deleting your launch.ini or remove any menus for MW2 or get a new default_mp.xex

Tried deleting launch still didn't work, I copied game disk to the xex menu and I tried starting it didn't work so I added the TU to the mw2 and it still couldn't get past the black screen

Make sure the disc is extracting 100% and maybe try freestyle dash if you're using xex menu to extract it. Sometimes xex menu is funny about extracting games. Also where are you putting your TU and is it the raw files or a tu file?

I'm putting the TU in the MW2 folder as there is only one other folder inside the mw2 which is system update.

But even without adding the TU it still wasn't working before and unfortunately I don't have freestyle dash

The TU doesn't go in the mw2 folder unless it's the raw files. If its a single file that looks something like tu0000000 or similar it goes in TU folder for that game in your Content folder. For mw2 the file looks more like TU00_000000 or something along those lines and it's a cache file, you put it in your cache folder. It still shouldn't matter as the game should launch without it which is why I think you're missing files from the extraction. Just download freestyle dash and try to extract it there

Downloaded freestyle dash and it also went to a black screen upon starting

Are you launching the default_mp.xex or default.xex? Also try launching it from freestyle dash maybe? If the disc is good and you aren't adding a menu then I'm not sure what it could be. Try launching the disc and see if it works and if you have stealth then download the title update when you do.
