8GB is the absolute minimum, 16GB should be good honestly. |

Really depends on what your planning on doing.
Most up to date games are starting to demand 8 GB's minimum while playing so that won't leave you with much head room to browse the web etc.. on the second monitor. I'd go with 16 just to be safe but if you're planning on just browsing the web/watching videos you should be perfectly fine with 8. |

RAM has almost nothing to do with how many monitors you use. |

8Gb ram is not something I would recommend even in single monitor setup because some games require more than that. For instance, back when Forza Horizon 3 was released I couldn't max out the game on 8Gb. 16GB is a must for smooth experience. |
