Ironically I posted about this. They seem to have made it so you can customise "classic gamertag" which allows you take gamertags that are available without numbers. However, there aren't many good gamertags left.

Go here: social.xbox.com/changegamertag

1. Type in the gamertag that you want & it will add numbers if the original one is taken let's say "Example" is taken so it'll add numbers but "NinjaExample" isn't taken so it'll stay "NinjaExample"

2. Click "Customise" on "how you'll appear in games that don't support the new gamertag update" and change it to that.

Besides what Ninja said, there's no way to get around the numbers.
In the coming months, I'd assume more and more developers will make their games so the numbers are disabled, but for now the choices are limited. If you have them, you kinda just gotta deal with it.
