What is your budget and currency? $2,000 - $2,500

What will you use the PC for? Gaming, video editing, streaming mainly

Do you need a monitor? If not, what monitor(s) will you be using?Yes, 3 of them

Do you need a keyboard, mouse, or other peripherals?No

Do you need an operating system?nope

Will you overclock?nope

Anything else we should know? Christmas is right around the corner and decided to treat myself to a new set up. I currently have a 3 monitor set up but its pretty outdated and starting to show its age. Id like to be able to play at the best quality possible while also being able to stream smoothly on twitch. The only thing im not upgrading as of right now is keyboard and mouse. One thing that i would like is a case with a see through panel on the side. If there are any other questions feel free to leave a reply and ill respond as soon as i can!

So, do you need 3 new monitors within the budget? Or you're re-using your current 3 monitors? If you're re-using, what monitor(s) are you using right now?

Do you want all 3 monitors to be 1080p, 1440p etc? Same size as well? What size monitors? Give a few more key details and I'll be willing to give this a go for you with my personal best advice.

I'd probably look at something like this;
PCPartPicker Part List

CPU: AMD Ryzen 5 5600X 3.7 GHz 6-Core Processor ($300.00)
CPU Cooler: Scythe Mugen 5 Rev. B 51.17 CFM CPU Cooler ($46.59 @ Amazon)
Motherboard: Asus ROG STRIX B550-F GAMING ATX AM4 Motherboard ($184.99 @ Best Buy)
Memory: Team T-FORCE DARK Za 32 GB (2 x 16 GB) DDR4-3600 CL18 Memory ($104.99 @ Newegg)
Storage: Sabrent Rocket Q 1 TB M.2-2280 NVME Solid State Drive ($109.98 @ Amazon)
Video Card: PNY GeForce RTX 3070 8 GB XLR8 Gaming REVEL EPIC-X RGB Video Card ($549.94 @ Office Depot)
Case: Lian Li PC-O11 Dynamic ATX Full Tower Case ($139.99 @ Adorama)
Power Supply: Cooler Master MWE Gold 550 W 80+ Gold Certified Fully Modular ATX Power Supply ($95.98 @ Newegg)
Monitor: MSI Optix MAG341CQ 34.0" 3440x1440 100 Hz Monitor ($379.00 @ B&H)
Monitor: MSI Optix MAG321CQR 31.5" 2560x1440 144 Hz Monitor ($349.00 @ B&H)
Total: $2260.46

Grab a 5600X when one comes in stock at $300. Grab an RTX 3070 or RX 6800 when one comes in stock at a reasonable price. Add whatever capacity 7200 RPM HDD you want/need.

If you want support for PCIe4.0 SSD's, spend a little extra on the motherboard for something like this;

The PC-O11 doesn't come with any fans, so you'll have to buy some case fans separately. If you want some cheapish, but decent fans;
pcpartpicker.com/product/M6vZxr/b...-fan-bl039
pcpartpicker.com/product/wj8H99/b...-fan-bl040

more expensive, better quality, quieter fans;
pcpartpicker.com/product/WrvZxr/b...-fan-bl066
pcpartpicker.com/product/bkJkcf/b...-fan-bl067

or if you want RGB, I'd probably get these;
pcpartpicker.com/product/YsGnTW/l...f-sl120-3b
in black or white.

For fan set-up in the PC-O11, I would probably run 3x120mm on the side as intake and 2x140mm up top as exhaust.

High refresh rate ultrawide and 1440p144Hz or 4k60Hz is what I would probably do for monitor. However, if you'd rather 3 x 16:9 monitors, then I'd drop the ultrawide but keep the 1440p144Hz monitor, then add a 4k60Hz panel on either side. Should be able to get a decent VA or IPS 4k monitor for $250-300 each, so 2 will be a little more expensive than one ultrawide but not too bad.
