This is very time consuming . Go to the original campaign scenarios screen and load up the Breaking Zoos. There are three challenges. Getting 25 animals, and having 8 new and different kind of exhibits, and have the zoo fame at 20. Every time you load up, the exhibits will be filled with poop. Just go to each exebit one at a time and clear all the poop. Then hit the pause and hit retry and do it again. You can also get the achievement for filling the water stations and food stations as well all the exhibits usually have these. The achievement count as long as you can refill.

if your having trouble to clean poop. Press Y to go to bird's eye view and hover over with left control stick and press A. It will be three icons to the right and will say Poop.
