Hose 20 oldies with the Uzi.
You can do this easily in 2 player quick race, just shot the other player with the Uzi and keep shooting until they explode 20 times. A good place to do is the Village 3, you can drive from the startpoint and then pickup again till you get uzi and drive in reverse back to player the 2, shoot them, and repeat.
