Monstrous animals are the strongest enemies in the game. They are the ones with yellow health bars and can take a lot of damage. There are 4 types: Monstrous Bison, Monstrous Boar, Monstrous Bear, Monstrous Cougar. To unlock their locations on the map simply upgrade the Cartography center at Prosperity (must have recruited Bean) and buy the maps from there. It's recommended that you get a legendary weapon first to make the fight much easier. It doesn't matter which of the 4 monstrous animals you kill, just one of them will suffice for this trophy.
