Music preference: Varied. Mainly Rock/Metal

Type / form factor and portability: Over ear? (Headphones, not like the Apple earphones that go in your ears) Would be good if 'portable', as i'll be carrying them around.

Open/Closed (Not for in-ear): Whichever is better for cancelling out noise? (Don't want to hear the bus engine)

I'm assuming you meant <$100 and the Sony V6 would be a good option. There aren't like any open options at this price point, sadly. If you get really lucky, you can find a Beyerdynamic DT48 within your price point, which is what I use for editing music, but they've been getting more popular.

$300 for rock, hip hop, and country is kind of iffy, since they're all so different. And the type of country probably makes a difference too, but the Audio Technica A900 (X? Haven't tried these yet but I can only assume they're a better version of the older ones) would be a good choice.) would be a good choice, and if you're really lucky, a Sony Z1000 would be even better.

75GBP, closed, and for the bus, normally I don't suggest noise cancelling headphones, but the Goldring NS1000 are surprisingly competent. If those aren't your thing, play.com seems to have the Koss PRODJ100 on sale for 50 GBP, which is a screaming deal. There's also the Sony ZX700 and Creative Aurvana Live.

As Ishcabible said, the Sony MDR-V6 would is a great choice, and I don't know of any other headphone that would suit your needs any better.

Over 300 doll hairs? Well, are you prepared to empty your bank account?

This is a hard recommendation, but in your position I would opt for the Ultrasone Pro 750, or the Pro 900 if you can deal with an amp and can afford a decent one. Tell me if you are, I can help you there as well. The Ultrasone sound is very interesting. The highs are very high and the lows are very low, leaving the mids recessed. You may not like it. If you don't, give them a chance and then return them. You might love them, though! I'm getting Pro 900s from B&H Photo online for $310, and they have a 30 day return policy if I don't like them, and it's not something I'm ruling out. Some people just don't like some sound signatures.

You could also get the Shure SRH940, which are known to be a bit light on bass. The Beyerdynamic DT880 or DT990 are also good options, but need relatively powerful amplification. They use an open design, which you may not like.

If you want a pair of IEMs, the Westone 3 or Audio Technica CK10 are good choices. There are more IEMs in your price range, and I've listed them in the guide at the bottom of the OP.

The SRH940+rap would be quite a comical experience. But rock and country they'd be awesome. And they're $180ish open box I think, so you could probably get a bassy headphone to fill your bass needs.

How about the AKG K181DJ? They're closed, portable, and durable. If you'd rather save a little money, the AKG K518 is also a good option.

However, I would definitely consider some IEMs, since they'll do what you want best. Etymotic IEMs have extremely good isolation, and should sound great for rock. They're a bit light on bass, though. The Ultimate Ears Triple-Fi 10 is also 110 GBP on Amazon UK, which is a very good choice.
