Win all 216 Stars in career mode
There are a total of 72 individual races in the game, you will need to all of them on Legend Difficulty.
If you are having trouble with certain races, try lowering the the difficulty to unlock better vehicles, to later complete easier.
Another thing you can do is learn the track to find shortcuts and to improve your times.
