There are 13 shiv doors in The Last of Us. Each door requires a shiv to be opened. You can craft these things anytime, any place. Just try to keep 1-2 in your inventory at all times. In the main menu under Bonuses - Statistics you can see how many you've already opened. However, there is no way to tell which ones you are missing. So try to get them in correct order. This can be done over multiple runs. Your statistics carry over to New Game+. You can also get the trophy via chapter select after beating the game. The checkpoint is displayed in the top left corner of the video.
